I am trying to "fusion" up the menu. I took the cheapo bacon ends and pieces and cooked them crispy with a caribbean spice mix I made up. It had cayenne, oregano, allspice, cinnamon, dried fruit peel, mustard, marjoram, bay, ginger, parsley, coriander and sugar. I added some tomato and just a bit of spinach to the bacon ans rewarmed. . .
I chopped a whole big onion and sauteed it in the butter Then I added a lemon cream mix and thickened just a little with a cheap bernaise package mix (because it was there).............. and basically made a creamy onion butter sauce similar to a rich but thin buttery bernaise.
I put the sauce over the pasta........... then just spooned the caribbean bacon veggie mixture over that and topped with an italian cheese mixture. IT IS DEFINITELY SALEABLE. The spice mixture will go a long ways and did not need very much to really add that pizazz. I think you would be impressed. I would like to see someone find a dish similar in this neck of the woods. - pete
